Chatti pathiri/Chatti pathal (Sweet stuffed layer pan cake)





It's a sweet stuffed layer pancake, another Malabar delicacy. It can serve as appetizer and as evening snack.Its sweet and crunchy taste you will definitely love. As you know it is traditional dish so its procedure will be longer but the end result will be good.
Ingredients
All purpose flour : 1 cup
salt
For coconut filling
Grated coconut : 1 cup
Sugar : 1 tbsp
For egg filling
Egg : 2
Sugar : 3 tsp
Cardamom powder : ½ tsp
Crushed cashew nuts : 1 tbsp
Crushed badam : 1 tbsp
Raisins : 2 tsp
Sesame seed : 1 tbsp
White poppy seeds : 1 tbsp
Ghee : 1 tbsp
For coating
Egg : 2
Milk : ½ cup
Ghee : 1 tsp
Preparation

In a bowl mix all purpose flour, salt and enough water to make a soft dough , knead the dough until it smooth

Divide it into five equal part and each piece roll into a ball
3. With the help of rolling pin make very thin tortillas
4. Cook these in a pan for few seconds (take out before turning brown)
Coconut filling
5. Mix the grated coconut with sugar in a pan and saute until it light golden color
Egg filling
6. Mix the egg, sugar and cardamom powder in a bowl.
7. Heat a pan add ghee and fry raisins
8. Add egg mixture into it scramble nicely. Then add cashew nuts and badam saute well. let it cool
Chatty pathiri
9. In a deep non-stick pot add 1 tsp of ghee and keep in low fire
10. Take milk in a bowl
11. In a separate bowl add egg and stir well
12. Dip one tortilla in milk first then dip in egg and place this in pot
13. Add coconut filling on this and spread evenly
14. Add sesame seed and poppy seeds
15. On top of it, place one more tortilla dipped in milk and egg
16. Then add egg mixture spread nicely. Add sesame and poppy seeds
17. Place one more tortilla dipped in milk and egg. Repeat it
18. Pour remaining egg over it then add sesame and poppy seeds
19. Close the lid and keep 10 minute
20. Flip over and cook the other side until it turn golden brown color
