Kai pola (Plantain cake)

I am with one more Malabar recipe kai pola (plantain cake). This is one of the main item in iftar parties. It can use as evening snack and as an appetizer.

 

Ingredients

 

Banana (ripe)                             :    3

Egg                                             :    4

Sugar                                         :    3bsp

Cardamom powder                     :    1tsp

Vegetable oil                              :   3tbsp

Cashew nut                                 :   1 tbsp

Raisins                                        :   1 tbsp

Ghee                                           :   1 tbsp

 

Preparation

  1. Peel out outer skin of banana and cut into small squire pieces​

  2. In a pan heat vegetable oil (pure ghee)and fry the banana till it get golden brown colour

  3. Drain out the excess oil and let it cool

  4. In same pan fry cashew nuts and raisins separately. Keep it aside

  5. In a bowl add 4 eggs , sugar and cardamom powder and wisk well

  6. Add fried banana into this egg mixture. Mix well

  7. Then add fried cashew nuts and raisins into it

  8. Heat 1 tsp of ghee in pressure cooker at low flame

  9. Pour egg banana mixture into it

  10. Close the lid without pressure cooker weight

  11. Cook in low flame until steam comes out through the nozzle

  12. Insert a tooth pick at the centre and ensure it comes out clean

  13. Once it cooled take out from cooker and serve
