Even it is most popular dish in Malabar area we rarely prepare this in my home. After marriage from my mother in law i got this recipe. She used to prepare very thin and soft pathiris. She is a wonderfull cook and she is having unique recipes that I will share you later.

 

 

Ingredients

Roasted rice flour                                                 : 2 cup

Water                                                                    : 2 cup

Salt to taste

 

Preparation

  1. Boil 2 cups of water with salt

  2. Add rice flour to boiling water and stir constantly (to avoid rice to stick in bottom that leads to get burne).

  3. Turn off the fire when it mixed properly

  4. Knead the dough thoroughly with hand(if possible try to knead still it little hot so pathiri will be soft)

  5. Knead until it become smooth

  6. Divide it into small pieces and roll in to small balls (small lemon shaped )

  7. Flatten each balls into thin pathiri either by using pathiri press or chapathi roller

  8. Dust with rice flour and keep aside(it is just to prevent sticking on surface. dont forget wipe out rice flour before placing in tawa) repeat this for all balls

  9. Heat a tawa and palce each pathiri on it

  10. After 20 sec flip over and cook other side. With spatula or with flat spoon press on centre and wait to puff up. Then flip again and take it

  11. Dipping in coconut milk for few minute just before serving will enhance taste

  12. Serve with any curry (spicy) you like

 

(adding 1 tsp of oil in rice flour will reduce stickiness of dough)
