



Sukhiyan is very famous tea time snack in Kerala. It’s a deep fried snack filled with mung dal and coconut jaggery mix. You can find out it in any road side tea shop in Kerala.
Ingredients
Mung dal :1 cup
Grated jaggery : ½ cup
Grated coconut : ½ cup
All purpose flour : 1 cup
Rice flour : 1 tbsp
Corn flour (optional ) : 1 tbsp
Cardamom powder : ½ tsp
Pinch of salt
Oil for deep fry
Preparation

Cook mung dal and pinch of salt with enough water (don’t overcook)

In a pan heat ¼ cup of water add grated jaggery in to it and stir until it melt

Turn of the fire and add cooked mung dal, grated coconut and cardamom powder in to melted jaggery. Keep aside to cool

Mix all purpose flour, rice flour, corn flour (it will give crispiness), salt and enough water to make thick batter

Make small laddus with mung dal mixture

Heat oil in a pan at medium high flame

Dip laddu in batter coat well and deep fry until both side cook well

Keep fried sukhiyan in kitchen tissue paper to remove excess oil and serve hot
